Abstract Nutritional profile and antioxidant properties of Cajanus scarabaeoides (L.) were investigated during present study. Sufficient quantities of crude proteins (20.66±0.35%), albumins (3.04±0.09%), globulins (10.65±0.11%), total carbohydrates (35.03±0.90%), total free amino acids (10.28±0.65%), and total lipids (8.04%) were present in this plant. The DPPH antioxidant assay demonstrated high antioxidant activity. The presence of phenols (0.41±0.51), tannins (0.694±0.52), phytic acid (1.33±0.56), and trypsin inhibitor activity (12.8 TIU/mg) revealed the existence of bioactive compounds in this plant. Considering results, it can be used as a beneficial food source. Top Keywords Nutritional Profile, Wild Legume, Antinutrient Analysis, DPPH Assay. Top |
