Abstract

In this article, the information on research on scientific justification of reproduction of products prepared on the basis of technology ofprocessing of melon fruit in the conditions of the Republic of Karakalpakstan was taken as the basis. At the same time, the influence of technological properties and chemical composition of zucchini on the properties of preservatives has been studied.
