Abstract

Jamun juice is a delicious fruit beverage. Jamun RTS beverages alone or as blended beverage with other fruit juices can find consumers acceptability and can be marketed at commercial scale. This paper has selected processed product, viz. Jamun Juice for study as it is produced and marketed on a large scale in the jurisdiction of University. The installed capacity of Jamun juice machine is 150 litres/day. The average quantity of Jamun juice processed was 313 litres in the year 2014–15. The raw material i.e. Jamun fruit utilized was 997 kg which showed recovery of 31.4 per cent. The cost of processing for Jamun juice was found as 195/litre. The benefit-cost ratio obtained in Jamun juice was 1.12, which indicates Jamun juice processing to be a profitable venture. The study has recommended processing of Jamun juice at commercial level and its marketing in urban domestic market through public private partnership (PPP) mode. The processing of Jamun as a value-added product can increase farmers’ income.
