Soybean is an excellent food and has tremendous potential to combat protein-calorie malnutrition in developing countries Out of 14 soybean processing units visited/studies in Sri Lanka, extrusion-expelling system seems to have good potential for its adaption in India specially in those areas where soybean production is in the range of 1000–1500 tonnes per annum and do not have soybean processing and/or transportation facilities and in those areas where soybean cultivation is likely to be introduced in the near future. This system will facilitate processing and utilization of soybean within the production catchment and nearby areas and provide good soy-protein and oil at low cost and thereby helping the rural/urban population to fight protein/calorie mal-nutrition at an affordable cost This technology is fairly simple and has significant potential for generating employment and income in the rural areas. The estimated cost of a plant having a capacity of 250kg soybean/h or 4 tonnes per day of 16 hours, would be about Rs 6 million.
