Abstract

Dried mango powder (Amchoor) is prepared from dried raw mango slices. Latter are generally open sun dried where dust and flies add to the microbial load and deteriorate the quality of the product. Solar dehydration fasten the drying process under dust free environment. Microbial load of mango slices dried in the open and in solar dehydrator were compared in this study. It was found that the solar drying was energy efficient and hygienic.
