Abstract

Guar gum is the powder extracted from the endosperm of the guor seed. A dry or wet milling process separates the endosperm from the seed shell. The plant is leguminous and the resulting powder from the endosperm contains 5% water-soluble polysaccharides and 2–5% proteins. The guar plant is grown not only for food, fodder and vegetable purposes but also as one of the most important raw material of great industrial importance. Guar gum is cold-water soluble polysaccharide and it has broad uses in food, industrial applications and textile printing. It is also used as a suspension stabilizeras it allows only slow settling because of its thickening properties. This paper covers the prospects of this important product of industrial importance and discusses processing techniques as well as application of guar gum powder.
