Abstract

The traditional milk products are of social, economic and cultural importance in the society. These products account for over 90% of all dairy products consumed in the country. The increasing demand for heat-desiccated milk products presents a great opportunity for the organized dairy sector in India to strengthen its base processa larger share of the expanding milk production. To accomplish this, the technology for processing, manufacture and packaging should be developed to suit mechanical handling. This paper highlights the traditional and mechanized process employed for the manufacture of heat-desiccated milkproducts.
