The challenge for feeding the population in 21st country is to find abalance between the growth of the population, the evolution of diets andthe likely availability of water resources. The optimum population of the planet earth depends to a large extent on the availability of water for agriculture to grow crops and produce food, in the most efficient way. The concept of water productivity has, in recent years, shifted from crops per unit area to crop per unit volume of water. Water productivity is expressed in kg/m3 where as nutritional water productivity (NWP) is expressed in nutritional units/m3 of water used. This paper describes the present status of technology for water harvesting, conservation and application highlighting nutritional water productivity, diets and their role in meeting the increased global water demand in coming years.
