Abstract

Sorption characteristics of coriander powder were determined in temperature range of 10–50°C and relative humidity range of 10–80% using static gravimetric method. Two and three parameter equations were fitted to the observed sorption data to test their adequacy. In case of three parameter equation, Hailwood and Horrobin equation was found to be the best fit while Smith equation was found to be the best-fit among two-parameter equations.
