The quest for novel technologies in the area of food processing and preservation has led to the application of ionizing and non-ionizing radiation in to enhance the process capabilities, energy efficiencies and the retention of the wholesomeness of the food. The applicability has infinite dimensions. However this paper reviews the applications in microwaves, a non-ionizing radiation in food preservation. The review states that microwaves indeed has proved to be a boon for its effective utilization in different operations the food industries in order enhance the overall process and profitability of the stake holders.
