India produces about 91 million tonnes of rice annually which is one fifth of the world production. Rice is considered as rich source of dietary energy and good source of thiamin, riboflavin and niacin. The nutrient content of rice makes it suitable food to impart health benefits. The continuous efforts of the rice processing and food technology scientists have provided a number of emerging technologies for drying, milling, curing and rice based products. The paper reports some of the recent innovations on rice processing and rice based products that have potential for scaling-up to the pilot scale and their commercial exploitation in Indian context.
