Knowledge of the engineering properties of jackfruit is necessary for the design of peeler cum corer for its processing. In this study, selected engineering properties of jackfruit (Artocarpus Heterophyllus L.) relevant to development of peeler cum corer were determined.
The observed values of length, diameter, weight, rind thickness, core length and core diameter of jackfruit varied from 26.52–55.81cm, 18.23–27.8 cm, 5.35–16.65 kg, 1.59–2.42 cm, 20.23–48.06 cm and 3.99–9.72 cm, respectively. The cutting strength of peeled jackfruit was measured by using a designed cutting probe with the universal testing machine. The observed values of cutting strength of peeled jackfruit varied from 2.5–3.5 kN and average value was found to be 2.96±0.42 kN.
