Aloe vera sed for a variety of purposes. Freeze drying or lyophilization is the process whereb(Aloe Barbadensis Miller) is a perennial, drought resisting, succulent plant, which has been uy water is removed from a material under freezing temperature and a high vacuum. The Aloe vera fillets of size 10×10×10 and 10×10×05 mm were freeze dried in Lyophilizer at-25, -35, -45 and-55°C under vacuum. The structural (Shrinkage Volume, Particle Density), functional (Moisture Content, Rehydration Ratio and Water Holding Capacity) and biochemical (Total Phenol Content) properties of the dried samples were determined after each drying run. The Page model was found to be best fitted based on the coefficient of variation. The drying constant ‘k’ was in the range of about 1.5×10−5 to 3.5×10−5 h−1. From the observations on functional, structural and biochemical properties of dried Aloe vera fillets at-25°C freeze drying temperature with 5 mm thickness found to be the most feasible treatment.
