Physicochemical Changes under Bulk Perforated Modified Atmospheric Storage of Guava

Abstract

Perforation is an alternative means to get desired degree of permeability. Guava weighing 5.1 kg was stored under non flexible box with 12.5mm hole, in polyethene film of 20 micron and in bulk at 10°C. Designed box had a provision for heat dissipation, ethylene absorption and antimicrobial system. Quality parameters like ascorbic acid, titratable acidity, total soluble solid and firmness were recorded at the predetermined time interval. At the end of the 20 days MAP storage at 10°C, box containing guava retained the 35.5% of the initial ascorbic acid compared to 14.5% for polyethene and 11.4% for the control samples. It was concluded that the developed system is capable to store guava fruits for 10 days more as compared to control.
