Abstract

Increasing awareness and popularity of millets has attracted scientist, agri-farmers, food manufactures to develop a product which meets the demand of the consumers and aims to consume resources in sustainable manner. To achieve the desired goals, relentless approaches to develop innovative and efficient technologies are under the progression. Few of the technologies that have met the goal of sustainably and achieved success in the commercial market are hybrid seed production, bio-fortification of seeds and crops in farming. Technologies like air jet milling, and automatic sowing machine are gaining the success via it potential to be highly efficient in terms of machinery. Value addition of millets being the weaker link is now witnessing enormous changes by the application of new technologies involving puffing and popping to create a desired taste. Use of composite flour to manufacture wide variety of baked products is a smart approach to meet the nutritional security and acceptability from consumers.
