Abstract

The quality of jaggery produced with different sugarcane varieties differ from each other. Therefore, an experiment was conducted to select suitable sugarcane varieties of the SL 2006 series for jaggery production. Jaggery recovery of twenty three varieties were evaluated by using Co 775 as the standard. ANOVA was used to detect the significance of the varietal differences for jaggery recovery and moisture percentage. Based on the jaggery recovery values, six varieties were selected for sensory analysis. The sensory scores of the varieties were analysed by Friedman non parametric test, and the results revealed that the varieties SL 06 93 and SL 06 224 are with good sensory qualities compared to the standard variety. These varieties could be used for large- scale production of quality jaggery.
