Composition of carotenoids in red colored mango (MANGIFERA INDICA L.) CV. 'LILY'

Abstract

Mango fruit is one of the choicest fruits of economical and nutritional importance. This study was aimed for profiling of carotenoids, which are responsible for colors of mango fruit. Red colored cultivar 'Lily' was profiled for carotenoids using chromatography method that identified eight carotenoids in peel and pulp of mango. Results revealed that p-carotene, cis-p-carotene and violaxanthin as major carotenoids of mango fruit (pulp and peel). However, peel was recorded with higher carotenoids by 2.17 times than pulp of mango. Carotenoids are color giving pigments with nutritional importance and their profiling in peel and pulp would be helpful in understanding the composition of carotenoids in mango fruit.
