The present study was undertaken to development and evaluation of cookies prepared by banana flower, lotus stem, finger millet and refined flour for anaemic adolescents girls, banana flower lotus stem, finger millet are the rich source of iron, banana flower are rice the hemoglobin in the body as it is rich in fiber and iron which assists in red blood cell production, lotus stem is useful for boosting hemoglobin and myoglobin production in your blood, finger millet is great source of iron making it beneficial for individuals with low hemoglobin level. The study was conducted into five phase, the first phase included procurement of banana flower, lotus stem, finger millet, refined flour the second phase was include development of cookies the third phase was include sensory evaluation the fourth phase was include packaging and storing the fifth phase was include proximate analysis. Sensory evaluation of the product included procurement of ingredients, development of cookies and the third phase was include sensory evaluation through 9 point hedonic rating test out of three variance (T1, T1, T2) the T2 was most acceptable with the mean value of 19.23±0.70 and proximate analysis of the product out of three variance (T0, T1, T2) the T2 sample had the highest mean value as compare T1 sample, T2 sample had the highest iron mean value i.e 19.23 ± 0.70 and T1 sample had less mean value i.e 17.55 ± 1.25.
