Abstract

Currently, among the republics of Central Asia, pomegranate is most widespread in Uzbekistan. Receiving and preserving juices from non-traditional raw materials has now become an urgent task for the canning industry. In the Republic of Uzbekistan, conditions and production are being established for obtaining juices and concentrates from pomegranates. Technological schemes, as a rule, include preparation of raw materials, separation of juice, purification, enzymatic clarification, filtration, and filling under aseptic conditions. There are many scientists and specialists from large canning factories in the republic who are engaged in research on the technology of complex processing of pomegranate fruits. Based on the existing conditions, it is possible to increase the production of various products from pomegranate fruits, counting on their export.
