The article discusses the importance of herbal supplements from medicinal plant materials for the prevention of microbial contamination of bread (bread disease). The efficiency of using the extract and powder from Alhagi pseudalhagi to prevent chalk disease of rye-wheat bread varieties has been established. The influence of these additives on the formation of consumer advantages of bread is revealed.
