This work contributes to the valorization of two honey samples from El-Oued region (South-East Algeria). The identification of floral sources of these two samples and the melissopalynology analysis showed that the sample of Djedaida Chamalya (A) was monofloral honey “Zygophyllum album L”, while the sample of Bagouzza (B) was polyfloral honey. The physicochemical study of samples shown that they conform with international standards characterization (pH 3.03-4.15), electrical conductivity (309.5-670ps/cm), density (1.495-1.490), phenolic content (189-142mg GAE/Kg) and flavonoids (43-38mg RUE/Kg), HMF (5.54-2.55mg/Kg). The antioxidant activity was estimated by spectrophotometrically (DPPH, TAC, FRAP), and electrochemical methods, and antibacterial activityevaluatedby agar diffusion method. The results indicated that the sample of Djedaida Chamalya (A) contained high amount of phenolic, flavonoid content and exhibited high antioxidant activity than sample of Bagouzza.
