Study the Physicochemical, Antimicrobial and Mechanical Properties of Edible Films Based on Cassava Starch Enriched with Extracts of Fenugreek

Abstract

In this study, in order to produce and examine the properties of enriched cassava starch films, fenugreek extract in ratios of 15%, 25%, 35% and 40% plasticizer added to 4 grams of cassava starch and starch films were prepared by Kasting under controlled conditions. Mechanical testing of cassava starch films containing fenugreek extract showed that the tensile strength decreased from 28.94 to 24.97 (MPa), percent of elongation increased from 32.12 to 36.42 and Young's modulus significantly decreased from 1012.24 to 789.76 (MPa). For cassava starch films containing fenugreek extract, permeability to water vapor increased from 7.25 to 10.51 (g/m.s.pa10−7) and permeability to oxygen increased from 5.20 to 7.10. Cassava starch films containing fenugreek extract water uptake, increased with increasing concentration. Examine the color parameters showed that transparency increased from 95/59 to 95/29and satiety of color index with increasing concentration, increased from 1.30 to 1.32. No new peaks were observed in spectrophotometric infrared spectra. Therefore, fenugreek extract without significant changes in the public properties of cassava starch can be used as active packaging in edible coatings and packaging of food and agricultural products.
