The investigation was conducted to evaluate physiological changes of different varieties of sapota at ambient storage. Fifteen varieties viz. Kalipatti, Cricket Ball, DHS-1, DHS-1 selection, DHS-2, PKM1, PKM-3, PKM-4, CO-1, CO-2, CO-3, Virudhunagar, Kirthibarti, Cricket Ball selection (ARS-A) and Cricket Ball (Udupi) were studied under Ghataprabha command area conditions. The variety Cricket Ball (Udupi), PKM-4, Cricket Ball Selection (ARSA), DHS-1 selection and CO-1 recorded minimum physiological loss in weight and maximum was recorded in Virudhunagar and DHS-1. The respiration of Cricket Ball, PKM-1, PKM-4, Virudhunagar, Kirthibarthi, Cricket Ball (Udupi) reach respiration peak at 2 DAS, Kalipatti, DHS-2, PKM-3, CO-2, CO-3, Cricket Ball selection (ARSA) reached respiration peak at 4 DAS. The hybrid DHS1, DHS-1 selection and CO-1 reached respiration peak at 6 DAS. Throughout the storage period, the variety DHS-1, DHS-1 selection and CO-1 showed minimum ripening per cent representing delay in ripening change. Among the varieties, CO-2, DHS-2 and DHS-1 selection noticed lowest decay per cent. However, Virudhunagar recorded highest decay percent during storage. Maximum shelf life was recorded in DHS-1, DHS-1 selection and CO-1 (10.00 days each) followed by Cricket Ball, DHS-2, PKM-3 and PKM-4 (8.50 days each). However, minimum was noticed in Virudhunagar (6.00 days).
