The protein content of recovered meat from marine reef cod (Epinephelus chlorostigma) ranged from 14.87 -24.09% based on the method of separation The moisture, fat and ash contents ranged from 68.66 -79.05, 2.12 -4.04 and 2.5 -2.73% respectively. The values for TVBN, TMA, FA, PV and total plate count of recovered meat indicated that the meat was of good quality. Yield of meat differed from 17.70 -19.55% of the filleting waste, based on the method of separation. The meat picked form eviscerated frame after boiling was found to be of better quality.
