Abstract

The concentrations of tannin, phytic acid, and oxalate varied from 490 to 750 mg/100g, 60 to 146 mg/100g and 4.50 to 10.8 mg/100g respectively, while trypsin inhibitor activity ranged from 12 to 22 TIU/mg. The correlation among antinutritional factors and physical characteristics as well as micro and macro-nutrient contents was positive.
