Abstract

Attempts were made to prepare chikki of peanut, along with pumpkin seeds and basil leaf powder. Addition of these two components to the chikki increased its nutritive value and decreased sensory characters. However, it may be consumed keeping in view the health benefits of pumpkin seeds and basil leaf. The ingredients of the chikki ware pumpkin seed (10%), basil leaves powder (2%), peanut (38%) and jaggery (50%). The samples of chikki were stored in low density polyethylene (LDPE), high density polyethylene (HDPE) and poly propylene (PP) pouches at room temperature. The sample were held for 90 days to observe changes in moisture content, fat content and other nutritional properties. The packaging material in the form of poly propylene material was found to be the best.
