Abstract

The leaves of curry tree (Murraya koenigi L) are widley used in india for Seasoning food stuffs. During present investigation curry leaves were washed and pre-treated with 0.1 to 0.5 per cent potassium metabisulphite in cold water for 5 minutes the treated cuury leaves were then dried at different drying condition viz. sun drying (30–40°C) for 4–6 days tray drying (40–60°C) for 3–5 hours and microwave oven drying (160–900W) For 12–26 min. The dried leaves ware analysed for proximate constituents and used to pre pare dhoka mix
