Experiments were undertaken to determine nutritional value of carrot pomace powder. For this purpose, carrot pomace was subjected to two different drying methods i.e. tray drying at 65° C for 6 hour and sun drying in aluminum tray up to desired moisture content of 10–11%. Slight differences in proximate composition was observed due to the drying methods, however, β-carotene content in the samples subjected to tray drying was 14.11mg/100 as against 4.73mg/100 due to sun drying.
