Abstract

Attempts have been made during present investigation to find out biochemical changes associated with the storage Cauliflower (Brassica oleracea var. botrytis) leaf juice. It was observed that dry matter (DM), nitrogen (N), chlorophyll content and pH of the juice, gradually decreased with simultaneous increase in lactic acid content due to fermentation when the juice was stored up to 48 hours.
