Abstract

Pectin was isolated from the peels of Lemon, Dry Lemon, Orange, Sweet Lime and Unripe Banana. Highest yield of pectin was recorded with fresh lemon peel. The gel forming pectin, isolated from peels had twice higher viscosity than commercial pectin.
