During the present investigation, Exopolysaccharide (EPS) producing lactic acid bacteria (LAB) was isolated from fermented food using modified MRS media with sucrose as a carbon source. The isolate of LAB was identified as Levilactobacillus brevis. It produced 1 g LB-EPS / l. Antagonistic activity of dialyzed LB-EPS by Agar-spot method against P aeroginosa MTCC10307, E coli MTCC452, K pneumoniae MTCC4031 and S aureus MTCC3160 exhibited zone of inhibition measuring 17 – 20 mm in diameter.
