Utilization of Germinated Soybean Seeds in Extruded Products

Abstract

Soaking of soybean seeds for 12 hours at 300C treatment of potassium metabisulphite solution (0.25%) for 3 min and germination (60 hours) were found effective against microbial growth. The soybean flour (30%) along with whole wheat flour (70%) for extruded product was found suitable with respect to colour, flavour, texture, taste, appearance and overall acceptability. However, addition of species improved the acceptability of extruded product.
