Abstract

During preservation of spinach leaves decrease in fresh weight and increase in dry matter content was observed. Preservation in modified earthen pots gave better results, which may be considered as an alternative to refrigerator, as it preserved β-carotene, ascorbic acid and chlorophyll to a large extent, with minimum loss of crude protein.
