Abstract

Onion cultivars, ‘Pusa White Round’ and ‘Pusa Red’ were stored under ambient conditions. Pungency and ascorbic acid content decreased, while total antioxidant capacity increased during storage. Pusa Red was found suitable for storage as pungency loss was minimum. Pusa White Round was suitable for dehydration with minimum browning.
