Effect of blending Date (Phoenix dactylifera L.) on quality of Gulabjamun
Abstract
Present study was undertaken to investigate physico-chemical characteristics of Gulabjamun prepared by blending khoa and date. Date in the form of paste was used @ 10, 20, 30 and 40 per cent. Gulabjamun blended with 20 per cent date was found to be of most suitable.
