The experiment was carried out to study the effect of different packaging material on physio-chemical characteristics during 120 days storage period. Sensory and microbial load also examined. Results show that the physio-chemical as characters of dried wild bittergourd rings was decreased with increasing storage period. Among all packaging materials 80 micron LDPE was found better in respect of maximum retention of ascorbic acid (51.70), total chlorophyll (11.12), total carotenoid (2.11), total alkaloid (1.27), rehydration ratio (5.12), microbial load and sensory scores during 120 days of storage.
Billergourd, chlorophill, cyroteroid, alkaloid
