Digestion is a key system of multicellular living body. α-Amylase is the first enzyme secreted by animal to digest food material. α-amylase act on 1–4 α-glucosidic bonds of polysaccharides to convert it into simple sugar which is digestible. In this study we have optimized the mammalian α-amylase enzyme on different pH, temperature and metal salts. Results revealed that enzyme gave the maximum activity of 72±0.02 unit min−1 and 46 ± 0.03 unit min−1 at pH 7 and 35°C temperature, respectively. However, with sodium and potassium ions it gave 64 unit min−1 and 57 unit min−1 enzyme activity, respectively.
