The objectives of this study was to investigate the in vitro release profile of curcuminloaded egg albumin nanoparticles using acetone as a desolvation agent and to study the effect of egg albumin concentration on curcumin release from nanoparticles. An initial burst release of curcumin which is adsorbed on the surface of nanoparticles and further sustained release of entrapped curcumin up to 72 h was observed in all particles. Release data was fitted in various mathematical models and the mechanism of curcumin release was analyzed using Korsmeyer-Peppas model. First order release model showed highest correlation coefficient (>0.96) and indicated that the release was concentration dependent. The Korsmeyer-Peppas release exponent (n) values of less than 0.45 proved the Fickian diffusion of curcumin from all nanoparticles.
