This study aims at to extraction of a valuable by-product, pectin, from a less-than-desirable source, namely banana pseudo stem considered to be an agro waste.. Pectin is a versatile biomolecule used in the food business as a thickening, gelling agent, emulsifier, and stabilizer. All plant cell wall include some amount of this molecule which is chemically similar to polysaccharides. Pectin was isolated by soxhlet extraction method, from banana pseudostems. In comparison to other procedures, this procedure yields 35% more pectin. The reliability of the product’s construction is tested by use of ftir (fourier transform infrared spectroscopy). X-ray diffraction was utilized to evaluate the pure pectin.
