Abstract

The present study was conducted at Horticulture Laboratory, Department of Horticulture, College of Agriculture, Indira Gandhi Krishi Vishwavidyalaya, Raipur (Chhattisgarh) during the year 2008-09. The physical properties of aonla fruits are round, ribbed and pale green. The average fruit weight, length, diameter and stone weight were recorded as 33.60 g, 3.40 cm, 3.99 cm and 2.08 g, respectively. The average volume, pulp weight and pulp: Stone ratios of fruits were obtained as 31.30 ml, 29.70 g and 14.28, respectively. The average specific gravity was 1.07. The average moisture content was recorded as 78.88 per cent. Among chemical composition of fruits the total soluble solids was obtained 10.8 per cent. The acidity of fruit was recorded 1.92 per cent and ascorbic acid content was 535.00 mg/100g. The special chemical properties of aonla were first time recoded during this study are the reducing sugar, non-reducing, total sugar and TSS: acid ratios of fruits which were obtained 3.91, 2.61, 6.52 per cent and 5.62, respectively.
