Effect of Blending Sapota Pulp on Chemical Properties of Lassi

Abstract

Present study has undergone to improve chemical properties of lassi by supplementation of sapota pulp @ 5% (GA2), 10% (GA3), 15% (GA4), 20% (GA5) and control (GA1). The average fat content of lassi was 5.40, 5.20, 5.03, 4.75 and 4.50 per cent respectively for treatments GA1 to GA5. The Solids not fat (SNF) content was 16.83, 18.40, 19.28, 19.58 and 19.88 per cent; total solids (TS) content of lassi was 22.23, 23.60, 24.31, 24.33 and 24.38 treatments GA1 to GA5. The average titrable acidity of treatment GA1, GA2, GA3, GA4 and GA5 was 0.70, 0.66, 0.63, 0.60 and 0.57 per cent respectively.
