Abstract

Cassava (Manihot esculenta Crantz) is one of the important crops in ensuring nutritional and food security to a large population in the developing countries. These Crops are cultivated and utilized widely in India. Whilst cassava, besides its food use, is important as an industrial raw material for starch and sago production. In view of the projected increase in global demand for processed products from cassava, this work is mainly focused on the increase in the production of sago by adding mechanism in roasting process to manufacture sago. This also deals with the Design and Fabrication of starch roasting process, which overcomes manpower shortage, reduction in time, reduction in cost, and increase in productivity compared with conventional method.
