Abstract

Samples of maize baby corn were collected from S.V.T. comprising of ten genotypes/varieties of maize to work out their quality traits for table purposes. Significant variability was observed in different quality attributes which ranged from 17.72–23.19% (edible portion), 11.11–15.46% (dry matter), 2.99–3.84% (total sugars), 2.26–3.58% (reducing sugars), 0.076–0.903% (non-reducing sugars), 1.90–2.36% (protein), 45.38–80.16 mg% (phosphorus), 8.59–11.66 mg% (ascorbic acid). Among the genotypes/varieties of maize, R-2005-8 showed the best content of total and reducing sugars, dry matter, phosphorus and protein in its baby corn.
