Leaf Protein concentrates (LPCs) were prepared from foliages of 30 wild and cultivated plants growing at Aurangabad (M. S.) and their chemical composition was studied. Out of 30 plants, the foliages of six plants yielded 30 g, seven plants between 20–30 g while the remaining plants yielded less than 20 g LPC-DM/kg of foliage. On an average the protein content in LPCs was 53.0 ± 12.5%, β -carotene 16.82 ± 9.53 mg/100 g, calcium 0.90 ± 0.88% and phosphorus 0.25 ± 0.08%. The results indicated that the region has potential to supply raw material in the form of green leaves for the preparation of LPC.
