Variability in Proximate Composition of Elite Genotypes of Amaranthus (Amaranthus spp.)

Abstract

Nutritional composition of eighteen genotypes of grain Amaranthus for moisture, soluble sugar, starch, crude protein, oil, lysine, free amino acids and minerals like calcium, sodium and potassium was worked out. Proximate composition analysis of all the genotypes of grain Amaranthus revealed that genotypes EC-321561, EC-198135 and EC-277971 contained the lowest moisture (6.53%), while genotype IC-42345 contained maximum moisture (11.23%). The lowest starch content was found in genotypes EC-38107 and GA-2 (45.50%), while the maximum was recorded in genotype IC-38120 (63.03%). RAM-4 genotype showed the highest potassium content (181.3 mg/100 g dry matter). The highest calcium was observed in genotype EC 198135.
