Abstract

Eight local ginger (Zingiber officinale Rosc.) cultivars of Karbi Anglong, hills of Assam, Hansoso, Hansokethe, Aaizol, Aamada, Nogaada, Rio-de-janeiro, Moranada and Jatiada were analysed. A significant variation in moisture from 76.08% to 85.27% was observed among the cultivars. The cultivar Hansokethe recorded a strong pungency indicating considerably high content of gingerols and volatile oil 1.043%, highest oleoresin 5.870% and highest zinc 0.890 mg/100g among all the cultivars. Hansokethe appeared to be promising with higher zinc, volatile oil, oleoresin and thus had high market potentiality.
