Abstract

The deoiled rice bran was used as a substrate for the production of tannase enzyme fermented with Aspergillus niger. The maximum activity was obtained at 30 C incubated for 96 h. The phenolic compounds were analysed by HPLC and it was found gallic acid 0.338 mg/gm and and Quercetin 0.142 mg/gm and gallo tannin.
