Amylase Activity and Ascorbic Acid Content in Legume Seeds During Germination

Abstract

The changes in the levels of amylase and ascorbic acid in horsegram, soybean and fababean seeds during germination were assessed till 5th day, Amylase activity increased till 3rd day post-treatment in soybean and fababean and thereafter declined. In horsegram, it decreased on 1st day and then increased gradually and the values on 4th, 5th day were similar. Ascorbic acid content was maximum on the 3rd day in germinated soybean and fababean and decreased thereafter in soybean only. However, in horsegram seeds, its content increased continuously till 5th day.
