Abstract

The preventive effect of Leuconostoc mesenteroides, isolated from cucumber, was studied in vivo. There was a reduction in the count of enterobacteria in mice dosed with Leuconostoc mesenteroides after 3 days of feeding trials. Toxicological data of mice serum revealed that the Leuconostoc isolates had anticholesterolaemic effect. Total serum cholesterol of the mice dosed with Leuconostoc isolate was lower (10.16 mg/dl) than the control. Protection of the gastrointestinal tract (GIT) by this isolate was also observed. Histopathological analysis confirmed that partial protection of the GIT in mice dosed with Leuconostoc isolate and simultaneously infected with Escherichia coli. Thus, isolated L.mesenteroides has a good probiotic effect in terms of reduction of enterobacteria in the GIT, anticholesterolaemic effect and protection of lining of GIT.
