A screen house experiment conducted in Zn deficient soil revealed that zinc played an important role in protein synthesis and other enzymatic reactions. The protein content and 1000 grain weight increased up to 4.0 and 4.8 per cent respectively at 10 mg Zn kg−1 soil compared to control. Genetic variation in quality parameters was observed at all Zn levels. β-Carotene in durum wheat and sedimentation value in aestivum wheat improved with the Zn application. The yellow berry prevalence reduced with the Zn supply.
